Chili Powder from Scratch

Ancho Chili Powder:

3 dried ancho chilies, stemmed
2 Tbsp. dried oregano
2 Tbsp. sweet paprika
2 Tbsp. whole coriander seed
1 Tbsp. cumin seed
1 Tbsp. chili powder

(1) In a small dry skillet, over low heat, add all of the above ingredients.

(2) Toast until they begin to become fragrant. This will awaken the flavors. (About 2 min)
(3) Place the spices in a mortar, food grinder, or food processor and grind until everything turns into a powder.

If using a mortar and pestle, you may
want to cut the ancho chilies into
smaller pieces with a pair of kitchen
shears. This will make it easier to grind up.
 (4) Place in an air tight container.
